When your schedule is packed but you still want to eat healthily, salads make great to-go meal options. Put together a salad that will fill you up and stand up to storage by opting for ingredients that will stay crisp.
J. Kenji Lopez-Alt, writing at Serious Eats, suggests kale, young collard greens, celery, carrots, lightly blanched cauliflower, jicama, dried berries, and nuts. He also mentions the most important factors to consider for hearty, make-ahead salads:
- Make the salad a meal with bold flavors that bring out the best in the ingredients while satisfying your palette.
- Have at least one ingredient (like beans) that makes the dish heartier and more fulfilling as a meal rather than a side.
- Drain your salad after you’ve let it rest in the seasoning. If your salad’s seasoning contains salt, then the salt will pull some liquid from the veggies. You want to drain this liquid before chowing down.
Of course, there are endless combinations you can use to make a seriously delicious salad. If you need some inspiration, check out these great posts on formulas for tasty dressings and what ingredients to use with each other.
